Crêpes that are green all over
Dadar Gulung, which come straight from Bali, are small green crêpes rolled around a filling of grated coconut and palm sugar.
If you are wondering about the unusual appearance of these crêpes, you should know that their green colour comes from pandan extract, a tropical plant (the pandanus).
Dadar Gulung recipe for 4 people
For four people, there’s nothing like an easy, delicious Dadar Gulung recipe:
For the crêpe batter: 250g rice flour or wheat flour, 10cl water, 25cl coconut milk, 1 egg, 1 tablespoon of pandanus leaf extract or green food colouring.
For the filling: 100g palm sugar or brown sugar, 200g grated coconut and 10cl water.
Start by making the crêpe batter, mixing together the water, coconut milk, flour, egg and pandanus extract.
Cooking Dadar Gulung to perfection
For cooking, it is best to use a frying pan: heat the sugar and water together, then add the grated coconut. Stir until the water has evaporated.
Cook the crêpes, turning them halfway through. Then place a little of the coconut mixture in the crêpe and fold it to achieve the best possible shape.
Dadar Gulung with rice and mango
Dadar Gulung is much loved served with rice and mango, or with tapioca and coconut.
And to go with it, there’s nothing like a delicious fresh fruit juice.
Dadar gulung VS French crêpes
Dadar Gulung are rolled and coloured, which is not the case with French crêpes.
Both types of crêpe are utterly indulgent, but Dadar Gulung are a little more “extravagant” thanks to their uncommon green appearance.
