Jian bing, street food to eat on the go in Beijing

Following the migration of Shandong’s inhabitants to Beijing, the Jian Bing made its appearance, with as many variations as there are regions.

The Jian bing is very popular in northern China. It originates from the city of Tianjin, located 200 km south-east of Beijing.

These crêpes are a much-loved snack, eaten on the go in the streets of Beijing.

Jian bing recipe for 4 people

Ingredients required:

  • 4 You Tiao fritters,
  • 80 g of T45 wheat flour,
  • 40g of mung bean flour,
  • 220ml of cold water,
  • 4 eggs,
  • 1 tablespoon of sunflower oil,
  • one white spring onion,
  • 1 level tablespoon of black sesame seeds,
  • a few fresh coriander leaves,
  • 1 tablespoon of fermented soybean paste or Peking duck sauce,
  • 2 tablespoons of water to dilute the fermented soybean paste,
  • a little red chilli purée (optional).

Start by mixing the wheat flour with the mung bean flour, adding the water little by little.

Next, mix 1 tablespoon of fermented soybean paste with a little water. Chop the spring onion and finely chop the coriander leaves.

To cook Jian bing, you can use a crêpe machine or a frying pan. Our Roller Grill crêpe machines are ideal for a professional result.

Heat the crêpe machine or the frying pan after greasing it with a brush. Pour in a ladleful of batter, then tilt the pan or use a spreader to spread the batter over the crêpe machine. Leave to cook until bubbles start to form.

Next, crack an egg and spread it over the whole crêpe. Add the chopped onion, black sesame seeds and finely chopped coriander leaves.

Once the egg is cooked, flip the crêpe over using a spatula.

Using a brush, coat the other side of the crêpe with the fermented soybean paste.

Place a You Tiao in the middle of the crêpe, fold or roll it up, and serve hot.

Jian bing, both light and hearty

Most often, Jian bing are served with eggs, sesame seeds, finely chopped spring onion, bean paste, a spicy sauce, a few coriander leaves and lettuce leaves.

But for those who would like a bigger helping of protein, you can add sausages or a double portion of eggs to your Jian Bing.

In China, Jian Bing are most often eaten at breakfast. They can also be enjoyed at any time of day.
